UDON




Water                      1 cup
Salt                          4.5 teaspoons
Bread flour             3.5 cups
All purpose flour   1.5 cups
Bread flour             for  dusting

Take a little bit of water and mix with the salt. When it dissolves in the water, add the remaining water. Combine the flours.

Using your hand, knead until it makes a dough. Then put it into a big plastic bag, take your shoes off and walk on it for 15 to 20 until it becomes smooth! It's the most fun part, but you'll be tired. I recommend to do this with some friends to take turn.


Take the dough out of the bag and shape it into a ball.
Put the dough back into the bag and let it sleeps for 3-4 hours.

Sprinkle the bread flour on the surface.
Roll out from the middle by using a rolling pin.
Rotate the dough and continue to roll and roll and roll....until it is 1/8-inche(3mm).

Fold into three and slice the dough into 1/8-inche.

Put the noodles in a boiling water and cook for 6-7 minutes.
You need to stir it otherwise it would get stick.
Drain and rinse the noodles by cold water.

I bought a "Mentsuyu" which is a basic Japanese noodle soup.
You could get it at any Asian supermarkets. 

Ground ginger
Green onion
Scraped Kombu
Wasabi
Ground yamaimo
Sichimi (seven-spice pepper)
Mochi

I like to put some boiled spinach and sichimi.
